TeX / LaTeX

TeX is a typesetting system created by Donald Knuth in 1978, designed to produce professional-quality mathematical and scientific documents. LaTeX, a macro package for TeX written by Leslie Lamport, became the standard author interface and is now the lingua franca of academic publishing in mathematics, physics, computer science, and engineering. A .tex file is plain text with markup commands; it is compiled into a PDF or DVI file rather than opened directly.
